Chef Rosalía Chay has been passed traditional Mayan customs and techniques dating back from generations.

Cooking the very best of Mayan food in her hometown Yaxunah in Yucatan,  she invites us on an extraordinary journey immersed in her village, where she will show us her techniques and invite us to indulge our palates with exquisite Cochinita and Relleno Negro as we sit at the table amongst her family. 

Trained by her grandmothers and family, Chef Rosalia Chay’s culinary journey began when she started preparing tortillas and burying food in the traditional underground oven; Now, she has cooked for some of the best Chefs in the world who have travelled to Yaxunah to learn from her, and absorb the unique array of Mayan flavors offered in her kitchen.
